The People We Meet
September 2017 marks the point on our road when we met Dave O'Carroll, the creator behind The People We Meet, and what a gem of a guy he is. With endless chats, early morning starts and sourdough to fuel us, Dave captured our love for delicate processes, baking and the inner workings of our day to day life beautifully.
The autumn months of 2017 were a transitional time for the us at Scéal. We were packing up our teeny space at Elmhurst Farm and moving to a larger production kitchen. Our time was spent figuring out a new work day and week, juggling sourcing new equipment, sourcing second hand equipment, changing our techniques, and re-educating ourselves while in the process of keeping up our weekly orders and market stalls. Our new bakery space meant we had the room to use a sheeter for laminating our croissant dough rather than hand rolling 80 kilos a week as we’d been doing on the farm. Storage space for wholegrains, large flour orders, a walk in fridge, and a hefty spiral mixer meant we could grow our sourdough baking and get an abundance of loaves on the go each week. All the pieces of the puzzle were falling into place. Ping, then the lovely Dave O‘Carroll enters our lives.
When Dave initially got in touch with us about his project and futuring Scéal Bakery in the series we were on the road home from Tipperary after buying our hardy, very heavy second hand pastry ovens. Incredibly excited/exhausted/daunted about the coming months ahead of us, with new ideas humming through our busy brains we shot him off an instant YESSSSS.
Similarly to Dave the release of this episode of The People We Meet marked one year of us venturing into the unknown with Scéal. It seems like a perfect pairing that we’d come together at this point in our separate journeys. It feels like we've made a true friend, almost as if we’ve known each other for years but only just met.
We could never have imagined being featured in something as stunning as this series, celebrating independent Irish producers, makers, artists, crafters, creators and do-ers. Dave you have told our story in a way we could never have. And for this we thank you. Lots and lots of love xx
